Fish tacos have become a staple in our kitchen. Whatever the season, they are a fairly easy prep meal, that is jam packed with flavors and veggies.
The best part about these tacos are that you can use almost any kind of fish and toppings that you like. Tilapia, sole, salmon, halibut the choice is yours. Tonight I used sole, which was breaded with some lemon pepper seasoning. For toppings I used chopped iceberg lettuce, julienned cucumber, baby spinach and some boccocini cheese. Made my own dressing, which was a homemade spicy tartar sauce (mayo, Sriracha and a pinch of garlic powder).
Serve on warmed tortillas, slathered with the tartar sauce. Top with veggies and Bon appetite!
