Leftover Sunday Stir fry 

Sunday Fun-day’s are great for sitting back with your loved ones and putting your feet up to watch some tv or enjoy the nice spring weather.

After a long week, sometimes Sunday’s are real lazy days where you don’t feel like slaving over a hot stove. This past Sunday was one of those days here, so I got to working on a tasty leftover stir fry.

Ingredients –

  • Leftover Pork tournado 
  • 3 chopped Carrots
  • 1 chopped onion
  • 5 chopped mushrooms
  • 1 cup of cooled basmati rice
  • Spices ( I used garlic, kosher salt, BBQ seasoning and a small pinch of sugar)

Method to the madness –

I used a wok, heated with a bit of oil. Place the carrots in first. I added a 1/4 cup of water and placed a lid over it to help steam the carrots to give them some tenderness. 

Add onions and mushrooms and sauté under tender. Add chopped up leftover pork and spices. Cook for 5-7 minutes.

Serve over hot basmati rice. A simple Sunday dish, which you can use with any meat or vegetarian if you wish.
